KITCHEN TIPS
Don't use knives to cut foodstuffs on top of glass, metal or tile surfaces. Use a wooden cutting board for this purpose
Use a knife with scalloped or serrated edge to cut soft bread and cakes to prevent crushing.
Wash dirty knives in warm water and dry immediately. Don't soak them in water; they warp and roughen.
For fluffing omelets, bring eggs to room temperature before beating. Do not use straight from the fridge.
To get the right texture of whipped cream, chill the bowl, beater and cream hours before whipping. Milk
fats will stay firm during whipping rather than become oily from friction.
To reconstitute whole dry milk solids, use 3-4 tbsp. of powdered milk to 1 cup water. This quantity will equal 1 cup of fresh milk. For best flavor, reconstitute 2 hours before use.
Add wine beforehand in recipes which include milk, cream, eggs, or butter to avoid curdling or
separation of the latter items.
Three tbsp. of cocoa and 1 tbsp. fat can be used as substitute in a recipe calling for ounce of chocolate.
